Delicious chicken gyros marinated in garlic and herbs, served with fresh veggies and tzatziki sauce.

Ingredients

  • 2 pounds boneless skinless chicken breasts (pounded to 1/2″ thickness)
  • 1/3 cup olive oil
  • 6 cloves garlic (minced)
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon cumin
  • 1 teaspoon dried basil
  • 1 teaspoon onion powder
  • 1 teaspoon sugar
  • Salt, to taste
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 46 flatbreads or pitas
  • 3 Roma tomatoes (sliced)
  • 1/2 cucumber (peeled, sliced, halved)
  • 1/4 red onion (thinly sliced)
  • 1 1/2 cups romaine lettuce (chopped)
  • Feta cheese, to taste
  • 1 recipe Tzatziki Sauce (store bought or homemade)

Instructions

  1. Marinate the Chicken: In a large bowl, combine olive oil, minced garlic, balsamic vinegar, lemon juice, oregano, cumin, basil, onion powder, sugar, salt, pepper, and paprika. Whisk this magical marinade until it’s well blended. Add the pounded chicken breasts, ensuring they’re fully coated. Cover and let it marinate in the refrigerator for at least 15 minutes (or even up to 4 hours if you have time).
  2. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade for later) and cook for 5-7 minutes on each side, or until the chicken is golden brown and fully cooked through. If using a grill, those beautiful char marks make it even more mouthwatering. Once cooked, allow the chicken to rest for a few minutes before slicing into bite-sized pieces.
  3. Prepare the Tzatziki Sauce: While the chicken is resting, whip up the tzatziki sauce if you’re making it from scratch. Combine Greek yogurt, grated cucumber, minced garlic, dill (if desired), lemon juice, and a pinch of salt in a bowl. Stir until smooth, and set aside. If you’re going for store-bought, simply open that jar and get ready for a flavor explosion!
  4. Assemble the Gyros: To serve, lay a flatbread or pita on a plate. Place a generous amount of chopped romaine lettuce followed by sliced tomatoes, cucumbers, and red onion. Load it up with the sliced chicken, drizzle the tzatziki sauce generously over the top, and sprinkle with feta cheese. Fold the pita around the filling, and you’re ready to dig in!

Notes

For maximum flavor, let your chicken marinate longer. Customize with your favorite toppings like avocado or grilled veggies.
