A light and fluffy salad that captures the essence of a classic summertime orange treat, perfect for potlucks and gatherings.

Ingredients

  • 1 package (3 oz) creamsicle-flavored gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 can (15 oz) mandarin oranges, drained
  • 1 cup crushed pineapple, drained
  • 1 cup mini marshmallows
  • 1 cup whipped cream (or 1 cup heavy cream, whipped)
  • 1/2 cup shredded coconut (optional, for garnish)

Instructions

  1. Gather your ingredients.
  2. Dissolve the gelatin in boiling water, stirring until fully dissolved.
  3. Cool the gelatin mixture by adding cold water and letting it reach room temperature.
  4. Combine the fruits in a large bowl.
  5. Pour the cooled gelatin over the fruit mixture and stir gently.
  6. Fold in the whipped cream until smooth and well combined.
  7. Chill the mixture in the fridge for at least 2-3 hours until set.
  8. Garnish with shredded coconut before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.
