A moist and flavorful cake combining citrusy oranges and aromatic cardamom, perfect for any occasion.

  • 3 large oranges
  • 1 cup granulated sugar
  • 2 cups plus 1 tablespoon all-purpose flour (divided)
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 3 teaspoons ground cardamom
  • 1 cup plus 1 tablespoon vegetable oil (divided)
  • 3 large eggs (at room temperature)
  • 1 tablespoon powdered sugar (for garnishing)

Instructions

  1. Start by zesting and juicing the three large oranges.
  2. In a large bowl, whisk together 2 cups of flour, baking powder, kosher salt, and ground cardamom.
  3. Combine the granulated sugar with the vegetable oil and the eggs; beat until smooth.
  4. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  5. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan.
  6. Pour the cake batter into the prepared pan, spreading it evenly.
  7. Place the pan in the preheated oven and bake for 35-40 minutes.
  8. Once baked, let the cake cool in the pan for about 10 minutes.
  9. Once completely cooled, sift powdered sugar over the top for finishing.

Notes

Serve with whipped cream or vanilla ice cream, and pairs beautifully with Earl Grey tea or lemonade. Store in an airtight container at room temperature for up to 3 days.
