A delightful gluten-free cake made with almond flour and fresh orange zest, sweetened naturally with honey and garnished with pistachios.

  • 2 cups almond flour
  • 1.5 tsp baking powder
  • 0.5 cup confectioner’s sugar
  • 0.333 cup honey (or maple syrup)
  • 1 tsp natural vanilla extract
  • Salt (a pinch)
  • Zest from 1 medium orange
  • 0.5 cup shelled pistachios (roughly chopped)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8-inch round cake pan and prepare with parchment paper.
  2. Combine the almond flour and baking powder in a mixing bowl and set aside.
  3. Whip the eggs, confectioner’s sugar, honey, vanilla extract, and a pinch of salt until light and fluffy.
  4. Add the fresh orange zest into the egg mixture and mix until well combined.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the roughly chopped pistachios until evenly distributed.
  7. Pour the batter into the prepared cake pan and bake for 25-30 minutes.
  8. Cool the cake for about 10 minutes before releasing it from the pan.

Notes

This cake is delightful on its own but pairs well with whipped cream or vanilla ice cream.
