A delicious and easy one-pot meal that combines cheesy goodness with the flavors of taco seasoning, perfect for weeknight dinners or gatherings.

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups chicken broth
  • 1 cup uncooked pasta (such as penne or rotini)
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)

Instructions

  1. Brown the Protein: In a large pot, brown the ground beef or turkey over medium heat. Drain excess fat.
  2. Sauté the Vegetables: Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Mix in the Flavor: Stir in the taco seasoning, chicken broth, uncooked pasta, diced tomatoes, black beans, and corn.
  4. Simmer the Mixture: Bring to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes, or until the pasta is cooked and liquid is mostly absorbed, stirring occasionally.
  5. Melt the Cheese: Stir in the shredded cheese until melted.
  6. Final Touches: Season with salt and pepper to taste, serve garnished with chopped cilantro.

Notes

Leftover One Pot Taco Pasta can be stored in an airtight container in the fridge for up to three days. For longer storage, freeze it for up to three months.
