A hearty one-pot meal that combines the bold flavors of BBQ with comforting pasta, perfect for cozy evenings.

  • 1 lb frozen meatballs (beef, turkey, or plant-based)
  • 12 oz penne or rotini pasta
  • 3 cups chicken broth
  • 1 cup smoky BBQ sauce
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Combine the frozen meatballs, pasta, chicken broth, BBQ sauce, heavy cream, smoked paprika, garlic powder, onion powder, salt, and pepper in a large pot or Dutch oven.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce the heat to medium-low and cover. Let it simmer for about 15-20 minutes until the pasta is al dente and the meatballs are heated through.
  4. Remove the pot from heat and stir in the cheddar and mozzarella cheese until melted and creamy.
  5. Serve hot, garnished with chopped fresh parsley.
