One Pot Marry Me Chicken Pasta

A comforting one pot dish featuring tender chicken, sun-dried tomatoes, creamy sauce, and pasta, crowned with cheese and fresh basil.

Ingredients

  • 1/2 cup oil-packed sun-dried tomatoes (oil drained)
  • 1 pound boneless chicken breasts or thighs (cubed)
  • Salt
  • Black pepper
  • 4 teaspoons Italian seasoning
  • 2 tablespoons salted butter
  • 2 cloves garlic (chopped)
  • 3/41 pound short cut pasta (penne or rigatoni)
  • 2 cups whole milk
  • 2 ounces cream cheese
  • 2 cups chopped baby spinach
  • 1/2 cup grated parmesan cheese
  • 1/2 cup fresh chopped basil

Instructions

  1. Sauté the chicken: In a large pot over medium heat, melt the butter and add cubed chicken. Season with salt, black pepper, and Italian seasoning. Sauté until the chicken is cooked through and slightly golden, about 5-7 minutes.
  2. Add aromatics: Once the chicken is perfectly cooked, add chopped garlic and sun-dried tomatoes to the pot. Sauté for another minute, allowing the garlic to become fragrant and infuse the chicken with flavor.
  3. Mix in pasta: Pour in the short cut pasta and stir everything together. Ensure the pasta is well-coated with the delicious chicken and aromatic goodness.
  4. Pour the creamy goodness: Carefully pour in the whole milk and mix everything well, ensuring the pasta is submerged. Add in the cream cheese to enrich the sauce and stir until it’s melted and combined beautifully.
  5. Allow to simmer: Let the mixture simmer gently, stirring occasionally, until the pasta is cooked al dente and has absorbed some of that creamy sauce, about 10-12 minutes. Add a splash more milk if the sauce gets too thick.
  6. Add spinach and cheese: Once the pasta is ready, fold in the chopped baby spinach and grated Parmesan cheese, watching as it wilts down and merges with the creamy sauce.
  7. Finish with fresh basil: Just before serving, sprinkle the fresh chopped basil over the pasta for a fresh kick and beautiful contrast.

Notes

This dish pairs wonderfully with a green salad and garlic bread. Store leftovers in an airtight container for up to 3-4 days.
