  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 4 cups vegetable broth
  • 1 lemon (zest and juice)
  • 1 cup heavy cream (or vegan cream)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for serving, optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  2. Add the pasta and vegetable broth to the pot. Bring to a boil, then reduce to a simmer and cover. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente.
  3. Stir in the lemon juice and zest, along with the heavy cream. Season with salt and pepper to taste.
  4. Serve warm, garnished with fresh parsley and grated Parmesan cheese if desired.
