One-Pot Creamy Smoked Gouda Sausage Pasta

A comforting one-pot pasta dish with smoked gouda, sausage, and spinach that is quick to prepare and deliciously creamy.

Ingredients

  • 12 oz penne or rotini pasta
  • 1 lb smoked sausage (kielbasa or andouille)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 oz shredded smoked gouda cheese
  • 1 cup fresh spinach
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot over medium heat, warm the olive oil. Add the diced onion and sauté for 3-4 minutes until soft.
  2. Brown the sausage: Stir in the minced garlic and sliced smoked sausage; cook for another 3-4 minutes until browned.
  3. Boil the broth: Add the chicken broth and bring to a boil.
  4. Cook the pasta: Once boiling, stir in the pasta and cook according to package instructions (about 8-10 minutes), stirring occasionally.
  5. Make it creamy: Reduce the heat to low after pasta is al dente. Mix in heavy cream and shredded smoked gouda until melted and creamy.
  6. Add fresh spinach: Fold in fresh spinach until wilted. Season with salt, pepper, and optional red pepper flakes before serving.

Notes

Pairs well with crusty garlic bread and a light side salad. Store leftovers in an airtight container for up to 3 days.
