Ingredients

Scale
  • 2 chicken breasts, diced
  • 8 oz elbow macaroni
  • 1 cup marinara sauce
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Sautéing the Chicken: In a large pot, heat the olive oil over medium heat. Add the diced chicken, season with salt, pepper, garlic powder, and Italian seasoning, and cook for about 5-7 minutes until no longer pink.
  2. Incorporating the Pasta: Stir in the elbow macaroni, marinara sauce, chicken broth, and heavy cream. Bring the mixture to a boil.
  3. Simmering to Perfection: Reduce heat to low, cover the pot, and let simmer for about 10-12 minutes until the pasta is al dente.
  4. Cheesy Goodness: Remove from heat and stir in the mozzarella and Parmesan cheese until melted and creamy. Taste and adjust seasoning.
  5. Serving Up: Serve hot, garnished with extra cheese or fresh herbs as desired.

Notes

Feel free to substitute chicken with sausage or ground turkey. Use any small pasta and add herbs for extra flavor.
