  • 1 pound boneless, skinless chicken breasts, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups low-sodium chicken broth
  • 1 cup long-grain white rice
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 cup sour cream

Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat.
  2. Sauté the chicken, seasoning it with garlic powder, onion powder, salt, and black pepper until golden brown, about 5-7 minutes.
  3. Add the chicken broth and bring to a gentle simmer.
  4. Introduce the rice, cover, and let it simmer for about 15 minutes.
  5. Fold in the broccoli, cheddar cheese, milk, and sour cream, stirring until well combined.
  6. Warm through by covering and cooking for an additional 5 minutes.
  7. Rest the casserole for a few minutes before serving.
  8. Serve with optional red pepper flakes for a kick!
