A simple yet satisfying dish that features smoky Cajun sausage and creamy pasta, perfect for busy weeknight dinners.

Ingredients

  • 12 oz penne pasta
  • 1 lb Cajun sausage, sliced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • Olive oil for cooking

Instructions

  1. Sauté the Cajun sausage in a large skillet over medium heat with olive oil until browned, about 5-7 minutes. Remove and set aside.
  2. Sauté the bell pepper, onion, and garlic in the same skillet until softened, about 3-5 minutes.
  3. Stir in diced tomatoes (with juices), chicken broth, heavy cream, Cajun seasoning, and uncooked pasta. Bring to a boil.
  4. Reduce heat to low; cover and simmer until pasta is al dente, about 12-15 minutes, stirring occasionally.
  5. Return the cooked sausage to the skillet, mix well, and season with salt and pepper to taste.
  6. Serve warm, garnished with chopped parsley if desired.

Notes

For a lighter version, swap heavy cream for half-and-half or a low-fat cream alternative. You can also add more vegetables such as spinach or mushrooms.
