  • 1 lb boneless skinless chicken thighs
  • 1 cup orzo pasta
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • Olive oil

Instructions

  1. Sear the chicken in a skillet with olive oil over medium-high heat until golden brown, about 5-7 minutes per side. Remove and set aside.
  2. Sauté the minced garlic in the same skillet for about 30 seconds until fragrant.
  3. Pour in the honey and soy sauce, stirring to combine and simmer for 2-3 minutes.
  4. Stir in the chicken broth and orzo. Bring to a boil, then reduce heat, cover, and let simmer for about 10 minutes until orzo is tender.
  5. Add the chopped spinach and grated Parmesan, stirring until the spinach wilts and cheese melts.
  6. Reintroduce the cooked chicken to the skillet, letting it heat through for 2-3 minutes.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

For a vegan version, substitute chicken with firm tofu and use vegetable broth.
