One-Pan Honey Garlic Kielbasa and Veggies Dinner

A quick and delightful one-pan meal combining kielbasa, sweet potatoes, and broccoli in a honey garlic sauce.

Ingredients

  • 1 lb kielbasa sausage, sliced into rounds
  • 1 sweet potato, peeled and chopped
  • 4 small Yukon gold potatoes, halved or quartered
  • 1 head broccoli, cut into florets
  • 1 small red onion, sliced (optional)
  • 2 tablespoons olive oil
  • 12 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil (for sauce)
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 1 1/2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1/4 teaspoon salt (for sauce)
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper or aluminum foil for easy cleanup.
  2. Whisk together the olive oil, melted butter, honey, brown sugar, minced garlic, salt, Dijon mustard, dried basil, and dried oregano. Reserve some for serving later.
  3. Spread 1 tablespoon of olive oil on your prepared sheet pan. Add the chopped sweet potato and Yukon gold potatoes in a single layer. Sprinkle with kosher salt and black pepper, then toss to coat evenly.
  4. Arrange the sliced kielbasa sausage on the sheet pan alongside the potatoes. Generously brush both with the honey garlic sauce, making sure to reserve some for later.
  5. Place the sheet pan in the oven and bake for 20 minutes, or until the potatoes begin to soften and the kielbasa starts to brown.
  6. Add the broccoli florets, drizzle them with a little olive oil, salt, and pepper. Return to the oven and bake for an additional 5-10 minutes, until broccoli is tender-crisp.
  7. Take the pan out of the oven and brush or drizzle the reserved honey garlic sauce over everything. Serve hot and enjoy!

Notes

Feel free to swap out vegetables based on availability. For extra crispiness, broil for the last 2-3 minutes of cooking.
