One Pan Honey Garlic Chicken with Potatoes

A cozy and simple one-pan recipe featuring crispy chicken thighs and tender baby potatoes glazed with a sweet and savory honey garlic sauce.

  • 4 bone-in, skin-on chicken thighs
  • 500 grams (about 1 pound) baby potatoes
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon pepper (to taste)
  • 1 tablespoon fresh thyme, chopped (plus more for garnish)
  • 1/4 cup (60 ml) honey
  • 4 cloves garlic, minced
  • 1/4 cup (60 ml) soy sauce

Instructions

  1. Clean the baby potatoes thoroughly to remove any dirt. Pat them dry with a kitchen towel.
  2. Dry the chicken thighs with paper towels to ensure crisp skin.
  3. Mix the chicken thighs, baby potatoes, olive oil, salt, and pepper in a large bowl.
  4. Whisk together the honey, minced garlic, and soy sauce in a separate bowl.
  5. Prepare the chicken in a large oven-safe skillet or baking dish, skin-side up, with the potatoes around it.
  6. Add the honey garlic sauce evenly over the chicken and potatoes.
  7. Preheat the oven to 200°C (400°F).
  8. Bake for about 35-40 minutes until the chicken reaches an internal temperature of 75°C (165°F).
  9. Garnish with fresh thyme and serve hot directly from the pan.

Notes

For a lighter version, use low-sodium soy sauce. Store leftovers in an airtight container in the fridge for up to 3-4 days.
