A flavorful one-pan dish featuring chicken, rice, and a bold honey BBQ sauce that will warm your heart and satisfy your taste buds.

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Sear the chicken in a large skillet over medium heat for about 5 minutes on each side until browned.
  2. Mix together the BBQ sauce and honey in a small bowl until well combined.
  3. Combine the sauce mixture with the seared chicken, ensuring it’s coated.
  4. Add the long-grain rice and chicken broth, stirring gently to combine.
  5. Bring to a simmer, cover, and reduce heat to low, cooking for about 20 minutes.
  6. Steam the mixed vegetables on top during the last 5 minutes of cooking.
  7. Rest for 5 minutes off the heat before fluffing the rice and serving.

Notes

Searing the chicken well adds depth and flavor. Feel free to customize ingredients like using quinoa or different vegetables.
