A comforting, easy-to-make one-pan dish featuring tender BBQ chicken and flavorful rice, perfect for busy weeknights.

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Sear the chicken for about 5 minutes on each side until browned.
  3. Mix BBQ sauce and honey in a small bowl.
  4. Pour the honey-BBQ mixture over the seared chicken.
  5. Add the rice and pour in the chicken broth, stirring to combine.
  6. Bring to a gentle simmer, cover, and cook for 20 minutes.
  7. Steam the mixed vegetables on top for the last 5 minutes of cooking.
  8. Rest for 5 minutes, fluff the rice, and serve.
