A comforting one-pan meal featuring tender chicken, fluffy rice, and vibrant veggies all coated in a sweet and tangy honey BBQ glaze.

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season and Sear the Chicken: In a large skillet over medium heat, add a drizzle of oil, season your chicken with salt, pepper, garlic powder, onion powder, and smoked paprika. Sear the seasoned chicken for about 5 minutes on each side until browned and fragrant.
  2. Create the Sauce: While the chicken is cooking, whisk together the BBQ sauce and honey in a small bowl.
  3. Add the Flavors: Once the chicken is nicely browned, pour the BBQ and honey mixture over the chicken. Stir gently to coat.
  4. Combine Rice and Broth: Add the long-grain rice and chicken broth to the skillet. Stir to combine.
  5. Simmer and Cook: Bring to a simmer, cover, and cook on low heat for about 20 minutes.
  6. Steam the Vegetables: During the last 5 minutes of cooking, add mixed vegetables on top and cover again.
  7. Fluff and Serve: Let sit for about 5 minutes, fluff with a fork, and serve.

Notes

For extra flavor, marinate the chicken in BBQ sauce and honey for a couple of hours before cooking. Swap chicken for tofu for a vegetarian version.
