A hearty, satisfying one-pan meal featuring succulent chicken thighs, long-grain rice, and vibrant mixed vegetables, all glazed in a delicious honey-BBQ marinade.

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Sear the chicken in a large skillet over medium heat for about 5 minutes on each side until browned.
  2. Create the glaze by whisking together the BBQ sauce and honey in a small bowl; pour it over the chicken.
  3. Combine the rice and chicken broth; stir to combine.
  4. Bring to a simmer, cover, and cook on low for about 20 minutes until the rice is tender.
  5. Steam the mixed vegetables on top during the last 5 minutes of cooking.
  6. Rest for 5 minutes before fluffing the rice with a fork and serving.
