  • 1 lb smoked sausage, sliced
  • 1 cup long-grain rice (uncooked)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup bell peppers, diced
  • 1 onion, diced
  • 2 cups chicken or vegetable broth
  • ½ cup BBQ sauce
  • Garlic powder, paprika, salt, and pepper to taste

Instructions

  1. Browning the sausage: In a large skillet over medium heat, brown the sliced sausage for about 5-7 minutes until well-seared and fragrant.
  2. Sautéing the veggies: Add the diced onion and bell peppers, sautéing for an additional 3-4 minutes until softened.
  3. Mixing in seasonings: Stir in the garlic powder, paprika, salt, and pepper; mix well until the spices are evenly distributed.
  4. Combining the ingredients: Add the uncooked rice, black beans, corn, broth, and BBQ sauce into the skillet; stir to combine.
  5. Simmering to perfection: Bring to a boil, then reduce heat to low. Cover and let it simmer for 20-25 minutes until the rice is tender.
  6. Resting and fluffing: Remove from heat and let sit covered for an additional 5 minutes. Fluff the rice with a fork.
