  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a medium bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy—about 3–5 minutes.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. Add the flour mixture, alternating with the buttermilk, starting and ending with the flour mixture.
  7. Divide the batter evenly between the prepared pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. Beat together cream cheese, softened butter, and vanilla until smooth, then gradually add powdered sugar until fluffy.
  11. Frost the cooled cake layers and serve.

Notes

Serve at room temperature. Garnish with cinnamon or nuts. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
