A delightful Middle Eastern semolina cake soaked in sweet syrup, rich in texture and perfect for family gatherings.

Ingredients

  • 1 cup semolina
  • 1 cup plain yogurt
  • 1 cup sugar
  • 1/2 cup melted butter
  • 1 teaspoon baking powder
  • 1/4 cup blanched almonds (for topping)
  • 1 cup water
  • 1 cup sugar (for syrup)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish to prevent the cake from sticking once baked.
  2. In a bowl, mix semolina, yogurt, sugar, melted butter, and baking powder until well combined.
  3. Pour the mixture into the prepared baking dish and smooth the top with a spatula.
  4. Use a knife to score the surface into diamond or square shapes and place an almond on each piece.
  5. Bake in the preheated oven for about 30-35 minutes, or until golden brown.
  6. While the cake is baking, combine water, sugar, and lemon juice in a saucepan over medium heat. Stir until sugar dissolves and let it simmer for about 10 minutes.
  7. Once the cake is done, pour the syrup over the hot cake and let it absorb for at least 30 minutes before serving.

Notes

Ensure ingredients are at room temperature for best results. Don’t skip the syrup soaking step.
