  • 4 chicken thighs or drumsticks
  • 2 tablespoons olive oil
  • 1 finely chopped onion
  • 3 cloves minced garlic
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup sliced green olives
  • 1/2 cup chopped raisins or dried apricots
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • Chopped fresh cilantro and parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and black pepper, and place it in the hot pan. Cook for 4 to 5 minutes per side until browned. Remove the chicken from the pan and set aside.
  2. Add the chopped onion in the same pan and cook until softened, about 5 minutes.
  3. Add minced garlic along with cumin, coriander, paprika, turmeric, ginger, and cinnamon. Stir for about 1 minute until fragrant.
  4. Pour in the diced tomatoes and chicken broth, stirring to combine. Return the chicken to the pan.
  5. Bring to a gentle simmer, cover, and cook for about 30 minutes until the chicken is tender.
  6. Stir in olives, raisins, and lemon juice. Cook uncovered for an additional 5 minutes.
  7. Garnish with chopped herbs before serving.
