4 chicken thighs or drumsticks
2 tablespoons olive oil
1 finely chopped onion
3 cloves minced garlic
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon paprika
1/2 teaspoon turmeric
1 teaspoon ginger
1/2 teaspoon cinnamon
1 can (14.5 oz) diced tomatoes
1 cup chicken broth
1/2 cup sliced green olives
1/2 cup chopped raisins or dried apricots
Juice of 1 lemon
Salt and black pepper to taste
Chopped fresh cilantro and parsley for garnish
Instructions
Heat olive oil in a large skillet over medium heat. Season the chicken with salt and black pepper, and place it in the hot pan. Cook for 4 to 5 minutes per side until browned. Remove the chicken from the pan and set aside.
Add the chopped onion in the same pan and cook until softened, about 5 minutes.
Add minced garlic along with cumin, coriander, paprika, turmeric, ginger, and cinnamon. Stir for about 1 minute until fragrant.
Pour in the diced tomatoes and chicken broth, stirring to combine. Return the chicken to the pan.
Bring to a gentle simmer, cover, and cook for about 30 minutes until the chicken is tender.
Stir in olives, raisins, and lemon juice. Cook uncovered for an additional 5 minutes.
Garnish with chopped herbs before serving.
