A delightful twist on traditional puttanesca, this dish features crispy salmon fillets topped with a flavorful tomato and olive sauce.

Ingredients

  • 2 salmon fillets
  • 2 cups canned diced tomatoes
  • 1/2 cup olives, pitted and sliced
  • 2 tablespoons capers
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a pan over medium heat.
  2. Season the salmon fillets with salt and pepper. Sear for about 4-5 minutes on each side.
  3. Remove the salmon from the pan and let it rest.
  4. Sauté the minced garlic in the same pan until fragrant.
  5. Add the diced tomatoes, olives, and capers to the pan and let it simmer.
  6. Return the salmon to the pan and spoon the sauce over the fillets.
  7. Garnish with fresh basil and serve hot.
