A modern twist on the classic eggplant parmesan, featuring layers of crispy eggplant, marinara, and melted cheese.

Ingredients

  • 2 large eggplants, sliced
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup all-purpose flour
  • 3 large eggs, beaten
  • Olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sprinkle salt on the eggplant slices and let them sit for 30 minutes.
  3. Rinse away the salt and pat the slices dry.
  4. Dredge each eggplant slice in flour, dip it into the beaten eggs, and coat it with breadcrumbs mixed with Parmesan cheese.
  5. Heat olive oil in a skillet over medium heat and fry the eggplant slices until golden brown, about 3-4 minutes per side.
  6. Spread a layer of marinara sauce in a baking dish, layer with fried eggplant, and sprinkle with mozzarella; repeat layers until all ingredients are used.
  7. Bake in the oven for 25-30 minutes until cheese is bubbly and golden.
  8. Let cool for a few minutes before garnishing with fresh basil.

Notes

Don’t skip the salting step to remove bitterness and excess moisture. For a healthier option, consider baking the eggplant slices instead of frying.
