A quick and comforting dish featuring bucatini pasta infused with umami-packed miso and earthy mushrooms.

Ingredients

  • 8 oz bucatini pasta
  • 2 tablespoons miso paste
  • 2 cups mushrooms, sliced (shiitake or button)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup vegetable broth
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Chili flakes (optional, for garnish)

Instructions

  1. Cook the bucatini pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté until golden brown, about 5-7 minutes.
  3. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Stir in the miso paste and vegetable broth, mixing well until everything is combined and heated through.
  5. Add the cooked bucatini to the skillet and gently toss it in the sauce to coat every strand.
  6. Season the dish with salt and pepper to your liking.
  7. Serve hot, garnished with sliced green onions and a sprinkle of chili flakes if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of vegetable broth.
