A comforting dish featuring juicy pork chops and perfectly roasted baby potatoes, all cooked on a single sheet pan.

Ingredients

  • 4 bone-in pork chops (1-inch thick)
  • 2 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons melted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. Pat the pork chops dry with paper towels and season with salt and pepper.
  3. Brush the seasoned pork chops with a mixture of melted butter and olive oil.
  4. Toss the halved baby potatoes with garlic, rosemary, thyme, paprika, and olive oil.
  5. Line a large baking sheet with parchment paper, arrange pork chops and potatoes.
  6. Roast in the preheated oven for 25-30 minutes until cooked through.
  7. Broil for an additional 2-3 minutes for extra crispiness.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven or microwave.
