A vibrant and flavorful salad capturing the essence of Mexican street food with grilled corn and creamy dressing.

Ingredients

  • 4 cups grilled corn (or frozen corn)
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 lime, juiced
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Combine corn, red onion, and cilantro in a large bowl.
  2. Whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a separate bowl.
