Experience the vibrant flavors of Mexican Street Corn, or Elote, a delicious grilled corn dish slathered in creamy sauce and topped with Cotija cheese.

Ingredients

  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Place the husked corn directly on the grill. Grill for about 10 minutes, turning occasionally, until charred.
  3. Mix together the mayonnaise, sour cream, lime juice, chili powder, and a pinch of salt in a bowl.
  4. Brush the grilled corn with the creamy mixture.
  5. Sprinkle the cotija cheese over each ear of corn.
  6. Finish with chopped cilantro and serve immediately.

Notes

For extra flavor, soak corn in lime juice before grilling. Feta cheese can be used as a substitute for Cotija.
