  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 teaspoon chili powder
  • 1 lime, juiced

Instructions

  1. Grill the corn: Fire up the grill to medium-high heat. Place the corn directly on the grill grates and let them sizzle for about 10-15 minutes, turning occasionally.
  2. Prepare the creamy mixture: In a large mixing bowl, combine mayonnaise, sour cream, cotija cheese, chili powder, lime juice, and salt. Stir until well blended.
  3. Brush on the flavor: Once the corn is charred, brush the creamy mixture all over each ear of corn.
  4. Garnish to impress: Sprinkle extra cotija cheese, chili powder, lime wedges, and chopped cilantro on top before serving.

Notes

Use fresh, in-season corn for the best flavor. For a spicier kick, add diced jalapeños to the creamy mixture.
