A delicious and healthy Mediterranean bowl featuring savory turkey meatballs, fresh veggies, and creamy tzatziki sauce.

  • 1 pound ground turkey
  • ½ cup Italian breadcrumbs or blanched almond flour
  • ¾ cup yellow onion, chopped
  • 1 large egg
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Chopped cucumbers
  • Kalamata olives
  • Tzatziki sauce
  • Fresh dill
  • Lemon wedges or slices
  • Cooked rice or pearl couscous

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground turkey, breadcrumbs (or almond flour), chopped onion, minced garlic, egg, kosher salt, and black pepper in a mixing bowl, mixing until well combined.
  3. Shape the mixture into meatballs about the size of golf balls.
  4. Place the meatballs on a lined baking sheet and bake for about 15 minutes. Broil for an additional 2-3 minutes for extra crispness.
  5. Prepare your rice or couscous according to the package instructions and chop your cucumbers.
  6. Assemble your bowl with a base of rice or couscous, topped with turkey meatballs, chopped cucumbers, and olives. Drizzle with tzatziki sauce and finish with fresh dill and a wedge of lemon.

Notes

For added flavor, mix in herbs like parsley or oregano into the turkey mixture. Use almond flour for a gluten-free option.
