A delightful Mediterranean Pasta dish combining vibrant flavors and satisfying textures, perfect for quick meals or impressing guests.

Ingredients

  • Pasta (Penne, Fusilli, or Gluten-Free)
  • Sun-Dried Tomatoes
  • Minced Garlic
  • Kalamata or Green Olives
  • Feta Cheese (Crumbled)
  • Extra Virgin Olive Oil
  • Salt
  • Black Pepper
  • Fresh Basil (Optional)

Instructions

  1. Fill a large pot with water and add salt. Bring it to a boil and cook the pasta until al dente. Drain the pasta, reserving some pasta water for later.
  2. Pour olive oil into a skillet and bring it to medium heat.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Stir in sun-dried tomatoes and olives, cooking for 2-3 minutes.
  5. Add the drained pasta and crumbled feta to the skillet, tossing to combine everything well.
  6. Season the dish with salt and pepper, adding reserved pasta water as needed for the right sauce consistency.
  7. Drizzle with a little more olive oil and fold in fresh basil if you like. Serve warm.

Notes

Cook the pasta al dente for the best texture. Customize by adding veggies or protein as desired. Can be stored in the fridge for up to three days.
