Deliciously fluffy Mediterranean Egg Bites loaded with bell peppers, spinach, and feta cheese, perfect for busy mornings or brunches.

  • 6 large eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup crumbled feta cheese
  • 1/4 cup cherry tomatoes, halved
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano

Instructions

  1. Begin by gathering all your ingredients. Dice the bell peppers, chop the spinach, and halve the cherry tomatoes.
  2. In a large mixing bowl, crack the six large eggs. Add in the salt, black pepper, garlic powder, and oregano. Whisk vigorously until light and frothy.
  3. Fold in the prepared bell peppers, spinach, and half of the crumbled feta cheese.
  4. Line a muffin tin with silicone or paper liners. Pour the egg mixture evenly into each muffin cup, filling them about three-quarters full.
  5. Place halved cherry tomatoes atop each mixture, pressing them gently into the batter. Sprinkle the remaining feta cheese on top.
  6. Preheat your oven to 350°F (175°C). Bake for about 20-25 minutes or until the tops are golden and the eggs are set.
  7. Once they’re baked, let them cool slightly in the pan for about 5 minutes before gently removing them.

Notes

Serve with mixed greens drizzled with lemon vinaigrette or tzatziki sauce. Can be stored in the fridge for up to three days.
