A delightful blend of roasted zucchini, bell peppers, red onion, cherry tomatoes, and broccoli, bursting with flavor and vibrant colors.

  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 red onion, chopped
  • 1 cup cherry tomatoes
  • 2 cups broccoli florets
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to a toasty 425°F (220°C).
  2. Combine the sliced zucchini, chopped bell pepper, red onion, cherry tomatoes, and broccoli florets in a large mixing bowl.
  3. Drizzle the olive oil over the vegetables, and sprinkle with dried oregano, garlic powder, salt, and pepper.
  4. Toss everything together until well-coated in the olive oil and seasonings.
  5. Spread the seasoned vegetable mixture onto a baking sheet in a single layer.
  6. Roast the vegetables for 20-25 minutes, checking occasionally until tender and lightly browned.
