A simple and flavorful dish featuring marinated chicken thighs roasted with baby potatoes, infused with Mediterranean spices.

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 pound baby potatoes, halved
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper together.
  3. Marinate the chicken thighs in the marinade for at least 30 minutes.
  4. Prepare the halved baby potatoes in a roasting pan, drizzling with olive oil, salt, and pepper.
  5. Arrange the marinated chicken thighs on top of the potatoes.
  6. Roast in the oven for 35-40 minutes, until cooked through and golden brown.
  7. Garnish with fresh parsley before serving.

Notes

For best flavor, marinate the chicken overnight. Use a meat thermometer to check for doneness.
