A vibrant Mediterranean Quinoa Salad featuring juicy cherry tomatoes, crisp cucumber, and creamy feta, all blended with fluffy quinoa and a tangy dressing.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and combine it with 2 cups of water in a pot. Bring it to a boil over high heat.
  2. Simmer for about 15 minutes. You’ll know it’s ready when it looks fluffy and the little tails start to separate from the seeds.
  3. Cool the quinoa to room temperature. You can spread it out on a plate to speed things up if you’re in a hurry.
  4. Combine the cooled quinoa, halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, crumbled feta cheese, and chopped parsley in a large bowl.
  5. Whisk together the olive oil, lemon juice, salt, and pepper until well combined in a small bowl.
  6. Dress the salad mixture with the dressing and toss everything together gently.
  7. Chill or serve immediately. Your Mediterranean Quinoa Salad can be served chilled or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Flavors will improve as they meld together.
