A vibrant medley of fresh vegetables, quinoa, and bold flavors inspired by the Mediterranean diet, perfect for a nourishing meal.

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. In a medium pot, combine it with the water or vegetable broth. Bring this mixture to a boil, then reduce the heat, cover, and let it simmer for 15 minutes or until the quinoa is fluffy and all the liquid is absorbed. Once done, let it cool.
  2. Mix the cherry tomatoes, cucumber, red onion, olives, feta cheese, and chopped parsley in a large bowl.
  3. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
  4. Add the cooled quinoa to the vegetable mixture, then pour the dressing over the top. Toss gently to combine.
  5. Serve the Mediterranean Quinoa Bowl chilled or at room temperature.

Notes

Perfect served alongside grilled chicken, shrimp, or roasted vegetables. Store leftovers in an airtight container in the fridge for up to three days.
