  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions. Once perfectly al dente, drain it and set it aside to cool.
  2. Prepare the cooled orzo with cherry tomatoes, cucumber, finely chopped red onion, Kalamata olives, crumbled feta cheese, and vibrant parsley in a large bowl.
  3. Whisk together the olive oil, lemon juice, salt, and pepper in a separate small bowl.
  4. Pour the dressing over the orzo salad and mix gently but thoroughly.
  5. Serve the Mediterranean Orzo Salad chilled or at room temperature.
