A delightful blend of eggs, colorful veggies, and feta cheese, perfect for breakfast or as a nutritious snack.

Ingredients

  • 6 large eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup crumbled feta cheese
  • 1/4 cup cherry tomatoes, halved
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the bell peppers and spinach by chopping them.
  3. Whisk the 6 large eggs in a large mixing bowl.
  4. Season the egg mixture with salt, black pepper, garlic powder, and oregano.
  5. Combine the veggies and feta cheese with the egg mixture.
  6. Grease a muffin tin with cooking spray or olive oil.
  7. Pour the egg mixture into each muffin cup, filling them three-quarters full.
  8. Bake for about 20 minutes, until set and lightly golden.
  9. Cool for a few minutes and remove from the muffin tin.
  10. Serve warm or store for later meals.

Notes

These egg bites can be served with fresh fruit or a green salad. They can also be frozen for up to 2 months.
