A vibrant and refreshing salad bursting with Mediterranean flavors, featuring chickpeas, cherry tomatoes, cucumbers, and tangy feta.

Ingredients

  • 15 oz can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine the salad ingredients in a large bowl.
  2. Whisk together the dressing in a small bowl.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Cover the salad and refrigerate for at least 15 minutes before serving.

Notes

Can be stored in an airtight container in the refrigerator for up to 3 days. Add cucumbers just before serving to prevent sogginess.
