A vibrant dish featuring tender chicken, crisp zucchini, juicy cherry tomatoes, and Kalamata olives, topped with creamy feta and gooey mozzarella.

  • 1 1/2 pound boneless skinless chicken breasts
  • 3 medium zucchini
  • 1 pint cherry tomatoes
  • 1 medium red onion
  • 4 cloves garlic
  • 1/3 cup Kalamata olives
  • 2 tablespoon olive oil
  • 2 tablespoon lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 4 ounce feta cheese
  • 1 cup shredded mozzarella

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly oil a 9×13-inch baking dish.
  2. Combine the boneless chicken breasts, sliced zucchini, halved cherry tomatoes, diced red onion, minced garlic, and Kalamata olives in a large mixing bowl.
  3. Toss everything with olive oil, lemon juice, dried oregano, thyme, paprika, salt, and black pepper until evenly coated.
  4. Transfer the mixture into the prepared baking dish, spreading it evenly.
  5. Bake uncovered in the preheated oven for 25 minutes.
  6. Sprinkle crumbled feta cheese and shredded mozzarella over the top.
  7. Return the dish to the oven for another 10 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Allow the baked dish to rest for 5 minutes and garnish with fresh basil or parsley.
