A vibrant and refreshing Mediterranean Chicken Salad perfect for summer picnics, packed with fresh veggies, shredded chicken, and creamy feta.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 each cucumber, diced
  • 1 each bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Gather your ingredients on the counter. Wash your cherry tomatoes, cucumbers, and bell pepper.
  2. Dice the cucumber and bell pepper into bite-sized pieces. Halve the cherry tomatoes.
  3. Shred the chicken using your hands or a fork.
  4. Combine the shredded chicken, diced veggies, olives, and feta in a mixing bowl.
  5. Dress the salad with whisked olive oil and lemon juice. Season with salt and pepper.
  6. Toss the salad gently to combine all the ingredients.
  7. Garnish with chopped fresh parsley.
  8. Serve chilled or at room temperature.

Notes

Store leftovers in an airtight container for up to 3 days. Keep feta and olives separate until serving to maintain texture.
