A delightful twist on a classic dish, these Meatloaf Muffins are cute, portion-controlled, and packed with flavor.

Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 small bell pepper, chopped
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 1/4 cup brown sugar
  • 1/4 cup ketchup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the ground beef, chopped onion, chopped bell pepper, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper in a large bowl.
  3. Grease a muffin tin to ensure the muffins don’t stick.
  4. Fill each cup of the muffin tin with the meat mixture, pressing it down slightly.
  5. Mix the brown sugar and ketchup in a small bowl until blended.
  6. Spread the glaze over each meatloaf muffin.
  7. Bake for 20-25 minutes or until they are cooked through.
  8. Allow the muffins to cool slightly before transferring them to a serving platter.

Notes

Leftover muffins can be stored in the fridge for up to 3 days or frozen for up to 2 months.
