Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup Parmesan cheese, grated
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add the olive oil to the skillet and let it heat up.
  3. Season both sides of the chicken breasts with garlic powder, onion powder, dried basil, dried thyme, salt, black pepper, and crushed red pepper flakes.
  4. Place the seasoned chicken breasts in the hot skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through.
  5. Remove the chicken from the skillet and set it aside on a plate.
  6. In the same skillet, add the heavy cream, chicken broth, Dijon mustard, and lemon juice.
  7. Stir the mixture to combine and bring it to a gentle simmer.
  8. Let the sauce simmer for about 3-5 minutes, stirring occasionally, until it thickens slightly.
  9. Add the chopped sun-dried tomatoes and Parmesan cheese to the sauce.
  10. Stir well to incorporate the tomatoes and cheese into the sauce.
  11. Return the cooked chicken breasts to the skillet, placing them in the sauce.
  12. Spoon some of the sauce over the chicken breasts.
  13. Simmer for an additional 2-3 minutes, allowing the chicken to reheat and absorb some sauce flavors.
  14. Sprinkle the chopped fresh parsley over the chicken and sauce just before serving.
  15. Serve the chicken with extra sauce poured over the top.

Notes

To store leftovers, place the chicken and sauce in an airtight container in the refrigerator for 3-4 days, or freeze for up to 3 months.
