A refreshing and vibrant salad featuring crisp cucumbers, juicy tomatoes, and zesty onions, marinated to perfection.

Ingredients

  • 2 cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 1 small red or white onion, thinly sliced
  • 1/4 cup apple cider vinegar (or red wine vinegar)
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional: 1/2 tsp red pepper flakes

Instructions

  1. Wash and slice the vegetables. Start by giving your cucumbers a good rinse under cold water, then slice them thinly. Next, halve the cherry or grape tomatoes and slice the onion.
  2. Whisk the marinade. In a mixing bowl, combine the apple cider vinegar, extra virgin olive oil, minced garlic, salt, pepper, and red pepper flakes. Whisk until well blended.
  3. Combine the ingredients. In a large bowl, combine the sliced vegetables. Pour the marinade over the top and toss together until the veggies are nicely coated.
  4. Chill and enjoy. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.

Notes

For best flavor, allow the salad to marinate for a couple of hours before serving. This salad pairs well with grilled meats or can be enjoyed on its own.
