  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno, minced
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat to get those cooking grates nice and hot for a perfect sear.
  2. Drizzle the chicken breasts with olive oil and season generously with salt and pepper to enhance the natural flavors.
  3. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  4. In a mixing bowl, combine the diced mango, finely chopped red onion, minced jalapeno, chopped cilantro, lime juice, and a pinch of salt and pepper. Stir until well mixed.
  5. Once the chicken is cooked to perfection, remove it from the grill and top each piece with the vibrant mango salsa. Serve immediately.
