A classic macaroni salad recipe that’s perfect for picnics, barbecues, and potlucks. Hearty, refreshing, and easily customizable.

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup celery, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 2 hard-boiled eggs, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Fill a large pot with water and bring it to a boil over high heat.
  2. Add a pinch of salt to the boiling water.
  3. Stir in the elbow macaroni and cook according to the package instructions, typically for about 8 to 10 minutes, or until the macaroni is tender but still firm to the bite.
  4. Drain the macaroni in a colander and rinse under cold water to cool it down, stirring occasionally to ensure all the noodles are cooled.
  5. Set the cooled macaroni aside in a large mixing bowl.
  6. In a separate small bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and black pepper.
  7. Whisk the ingredients together until the dressing is smooth and fully combined.
  8. Pour the dressing over the cooled macaroni in the large mixing bowl.
  9. Toss the macaroni gently to coat it evenly with the dressing.
  10. Add the diced celery, diced red bell pepper, and finely chopped red onion to the macaroni mixture.
  11. Stir everything together until the vegetables are evenly distributed throughout the pasta.
  12. Carefully fold in the chopped hard-boiled eggs, being gentle so they don’t break apart too much.
  13. Sprinkle the chopped fresh parsley over the salad and stir it in to combine.
  14. Taste the salad and adjust the seasoning with extra salt or pepper if desired.
  15. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
  16. Serve chilled, and enjoy your homemade macaroni salad.

Notes

Allow the macaroni to cool completely before mixing it with the dressing to maintain the right texture.
