Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup cocoa powder
  • 1/2 cup sugar or sweetener
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. Mix together the Greek yogurt, cocoa powder, sugar (or sweetener), and vegetable oil until smooth.
  3. Add the eggs and vanilla extract to the wet mixture, stirring until well blended.
  4. Combine the whole wheat flour, baking powder, and salt in another bowl.
  5. Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow to cool in the pan before cutting into squares and serving.

Notes

Serve with Greek yogurt and fresh berries; can also freeze for up to a month.
