  • 1 box cornbread mix
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 can creamed corn
  • 1 cup milk (Regular or almond milk can be used)
  • 2 whole eggs
  • 1 cup cooked and crumbled bacon or sausage (optional)
  • 1 cup diced bell peppers or onions (optional)
  • To taste Salt and pepper
  • 1/2 cup sour cream (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Gather all your ingredients while the oven heats up.
  3. Whisk together the milk and eggs in a mixing bowl, then add in the creamed corn and sour cream.
  4. Combine the cornbread mix, salt, and pepper in another bowl.
  5. Add the dry mixture to the wet ingredients, folding gently until just combined.
  6. Fold in the crumbled bacon or sausage and diced vegetables.
  7. Grease a 9×13 inch baking dish and pour the mixture, spreading it out evenly.
  8. Top with shredded cheese.
  9. Bake for about 30-35 minutes or until the top is golden.
  10. Remove from the oven and let cool for 10 minutes before serving.

Notes

For a spicier kick, mix in jalapeños. You can prepare this dish ahead of time and bake just before serving.
