A comforting bowl of lentil soup, perfect for chilly autumn days, filled with earthy flavors and vibrant vegetables.

Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, diced carrots, and diced celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Combine the lentils, vegetable broth, diced tomatoes, cumin, and thyme.
  5. Bring to a boil, then reduce heat and let simmer for 25-30 minutes, until lentils are tender.
  6. Season with salt and pepper to taste, then serve hot.
